| This pommard is powerful, racy with elegant tannins, notes of undergrowth spices, very ripe fruit (blackcurrant, blackberries) and is persistent on the palate. He is THE gentleman of our Pommard!
Food pairing: It will sublimate a woodcock with two junipers, a capon with vanilla, a stew of beef cheeks.
On the cheese side: a cantal, an Etivaz or a piece of Sbrinz.
On the dessert side: a raspberry tart, a thousand hazelnut and chocolate pancakes or a thousand sheets of saffron chocolates.
